Food pairing
Malbec is a great match with steak, lamb and venison or fattier fish like salmon. Malbec pairs well with semi- hard cheese that aren’t too salty like Asiago, Cheddar,
Colby and Gouda. Meaty pasta also works well with Malbec.
Wine Making
Receiving of grapes during the morning around 16°C. Crushing and de-stemming commenced and the mash is pumped to open top fermentation tanks. Cold soaked for two days at 10-15°C then yeast was added so that fermentation could start. Fermentation took place at 28-30°C. Punch downs 3 times per day. No post fermentation maceration was done. Malo-lactic fermentation was done in stainless steel tanks whereafter the wine as aged for 24 months in French oak barrels.
Location
Malbec was planted in 1995 on Western facing slope. Altitude above sea level: 155 – 175m. The soil on this block varies from medium to heavy textured, with a moderate structure and shale mother material. The clay content varies from 15-25%
