Wine Making
The grapes are handpicked into harvest crates early in the morning to ensure the temperature in the grapes stay as low as possible to preserve fresh flavours. Crushing and de-stemming takes place, whereafter the juice was kempt on the skins for several hours, before pressing, to extract extra flavors. The juice settled for 48hrs and was then transferred to stainless steel and inoculated with commercial yeats. The wine was aged on the lees for 9 months to develop more complex flavors and a rounder palet.
Character
With a radiant pale gold hue complemented by a youthful green glow, this wine exudes an alluring appeal. Its pineapple, and lemon & lime fruit purity captivate the senses. On the palate, one is greeted with a beautifully round and comforting texture, accompanied by a remarkable complex length. Zesty notes of lime and lemon add a refreshing touch. This wine effortlessly showcases its grace, even in the absence of oak influence.
Serving
Unoaked Chardonnay pairs exceptionally well with sushi and shellfish, such as langoustines, clams, and mussels, enhancing their flavours. For cheese lovers, this Chardonnay shines when served alongside mild, semi-soft cheeses like gouda or a delicate blue.
