Wine Making

The grapes are handpicked into harvest crates early in the morning to ensure the temperature in the grapes stay as low as possible to preserve fresh flavours. The grapes were pressed whole bunch in a Inert Press, which means no oxygen contact took place in the pressing process. The juice settled for 48hrs and was then a portion was fermented in stainless steel and the other portion in French oak barrels. The wine was aged sur lie for 9 months. Whereafter it was blended and bottled. Only the barrel portion of te wine went through malolactic fermentation.

Viognier also works in wine and food pairings with a wide variety of seafood and shellfish, roasted or grilled chicken, veal, pork, spicy flavors and Asian cuisine. Viognier is also delicious with select vegetable and salad courses and of course hard or soft cheese.
